This week’s Weekend Sipper is:
San Matias Tahona Blanco – “Rock Star”
There’s a lot to love about this particular tequila, and the name alone makes one reason clear. Any tequila that involves a tahona in the production process will win a special place in our heart, and this one is no exception. Tahona products tend to be more agave-forward, earthy, and complex, but they also take a long time to make. This means it wasn’t made in a hurry and didn’t involve taking shortcuts. In general, quality is more important than efficiency.
For those who don’t already know, a tahona is a big stone wheel that crushes the cooked agaves and extracts the sugars from the fibers of the plant. This is a super old-school method that takes a lot of time and effort. Although its use has been largely abandoned, it has not been forgotten by hardcore tequila aficionados, who can’t get enough of artisianal products made the old-fashioned way.
Luckily for us, there are still a few brands that use the tahona, and San Matias Tahona Blanco is the latest gift to tequila aficionados.
It’s got aromas and flavors of cooked agave, herbs, grass, and anise (black licorice). It has a medium, thick body, creamy mouthfeel, and a clean satisfying finish. And, thankfully, it’s not too sweet!
